Dauphine

Dauphine is often found for sale in French nurseries. Dauphine is a very productive fig. It has two crops; one early, in July, on the previous years growth and one in later fall on new growth. The first crop has a red to dark brown skin with amber flesh. It's larger in size than the second crop. Dauphine is a very good juicy and sweet fig. Mari says she can taste papaya and cane sugar with hints of molasses. The second crop figs are much a darker brown, purple to black with pink flesh and have less of a neck than the first crop. They are also sweet and juicy with a taste of honey. The quantity and quality of figs we get here in north New Jersey make Dauphine a very desirable fig.

Avoid pruning the new growth in the fall to maximize the number of first crop figs the following year.

This fig was widely cultivated near Paris in the Argenteuil region. In the nineteenth century it was know as Rouge d'Argenteuil.

Some history books say this fig was grown at the Palace of Versailles. It's interesting to note that the "Dauphin" is also the name given to the heir to the throne in France and his wife is the "Dauphine".
